1 Large Tub (500ml) Natural Organic Yogurt or Coconut yoghurt – NO SOYA
425gms of Gluten free organic oatlets – Bunalun is a good brand – if you prefer a finer texture to the bread just blitz half the oats and linseeds before adding to the mixture.
1 tsp Bread Soda
1 tbsp of organic honey – optional but nice
2 tbsp pumpkin seeds – they are lovely in the bread
1 tablespoon – linseeds
1/2 tsp Salt (Optional)
1. Place yogurt, and honey in a mixing bowl and stir well.
2. Mix the oats, bread soda, seeds & salt in a separate bowl, add to the yogurt mixture and stir thoroughly.
3. Place in a greased or parchment lined 2lb loaf tin, sprinkle with oats and bake at 180C/350F/Gas Mark 4 for 40-45 mins.
A sweeter version of this bread can be made by adding chopped organic dates or apricots etc.
